Aromatic baked apple with a raisin and cinnamon filling

1 large aromatic and tart apple (e.g. Boskoop or Cox’s Orange)
2 tablespoons raisins
1 teaspoon lemon juice
1 teaspoon sugar or honey
2 pinches cinnamon
1 tablespoon gluten-free oats
3 tablespoons water
1 teaspoon (5 g) organic vegan margarine (without milk, egg, soy or nuts)

Preparation

Soak the raisins and oats in a little warm water for one hour and then drain them into a sieve. Wash the apple thoroughly and pat dry. Remove the stem and cut off a 1.5 cm-lid from the top. Use an apple corer to remove the core. Mix the raisins and oats with the lemon juice, sugar and cinnamon and fill the hole in the apple. Add a little margarine on top. Place the lid on top. Bake in the oven preheated to 180 degrees Celsius for 30 minutes. Leave to cool for a few minutes. Sprinkle with a little cinnamon and serve.

Bon appétit.
